RESCUING METHODS, TRADITIONS AND CULINARY RECIPES

Traditional Specialties Guaranteed (TSGS) is a new mechanism aimed at the protection of agricultural and food products, as long as they have specific features that allow their differentiation of other products in the same category and that they are manufactured from traditional ingredients or have a handmade production method.  Different from geographical indications, TSGS’s are not limited to a specific geographical area. Europe has already protected several TSGS’s such as Asiago, Olio de Puglia, Cordero Manchego and Vinagre de Jerez, among others. The panel will explore and explain TSGS’s as a tool to ensure protection to traditional recipes and craft processes, its implementation in Europe and initiatives for similar regulations in Peru and the rest of the Andean region.
