
ASIPI offers, after the congress, a tour along the Mezcal Route in the beautiful state of Oaxaca, where we will have an opportunity to learn about the multiple species that give rise to the famous beverage, as well as its production process and the chance to taste it.
On the first day, we will visit the facilities of the Autonomous University of Chapingo (UACH) located in Zimatlán de Álvarez where, together with the producers, they follow-up, reorganize, and update a catalog of maguey and/or agave, which includes 90 species. They have also implemented programs aimed at promoting the conservation of endemic maguey plants, built nurseries, and implemented health and safety measures.
At this location, we will have an informative talk about conservation efforts for different agave species from various regions of Oaxaca, an explanation about the different agaves, a visit to the university’s laboratories where the seeds are reproduced, and a tour of the greenhouse.




Afterward, we will head to the world capital of Mezcal, Santiago Matatlán where, after lunch, we will immerse ourselves into the wonderful world of Mezcal. We will take tours of the maguey plantations, receive detailed explanations of the artisanal Mezcal production process, the bottling process, and finally, the best part, the tasting of Mezcal, including different types of agaves and blends.
Back in the city of Oaxaca, we will visit the offices of the Mezcal Regulatory Council, where we will meet its president and have a Mezcal tasting on the terrace of their facilities.

On Friday, we will enjoy a city tour of Oaxaca de Juárez (originally known as Villa de Antequera), is the capital of the state of Oaxaca and has been a UNESCO World Heritage Site since 1987. It earned this title for being one of the most beautiful examples of a colonial city in Mexico and Latin America due to its variety and multiculturalism, making Oaxaca one of the most representative states of Mexico’s essence.

During the tour, we will have the opportunity to visit the cathedral, the Santo Domingo Cultural Center (with a museum, library, ethnobotanical garden, and bookstore), and the magnificent Santo Domingo Church, an exquisite baroque masterpiece of the viceroyalty. We will also explore the temples of the Company of Jesus, San Agustín, San Felipe Neri, and San Juan de Dios; the Benito Juárez Market, where you can enjoy local cuisine and immerse ourselves in authentic flavors and scents; the Macedonio Alcalá Theater and the pedestrian walkway filled with cafes, shops, and mezcalerías; the Museum of Contemporary Art of Oaxaca, with three beautiful courtyards; the Rufino Tamayo Museum of Pre-Hispanic Art; and the Alameda de León, among others.
There are many reasons why Oaxaca is picturesque! Not in vain, Oaxaca is the state where the most ethnic groups (19) coexist, and where the colorful splendor can been seen in both its gastronomic dishes and its handicrafts, such as alebrijes, embroidery, black pottery, or wool rugs painted with vegetable dyes.
